"Observed bacon spilled over into a container of salisbury steak, all raw, and raw beef above ranch and bread slices in the prep top cooler 1; raw chicken stored above raw egg and raw egg over shredded cheese and onions in the prep top cooler 2; box of raw salisbury steak stored directly on top of raw bacon in the walkin cooler all in the main kitchen. CA: TCS food must be stored in a manner that raw foods are separated based on the minimum required cook temperature by spacing and placement. COS: Bacon and steak placed in separate containers; ranch and bread slices were placed on the left side of the cooler away from beef; raw egg placed in the walkin cooler; and raw egg discarded. | Observed TCS cold held foods in the main kitchens prep top cooler 2 and the walkin cooler(*see page 2).
