"Observed several food items not in-use stored uncovered along prep tables in Asian front food service area (4 containers of leafy green mixes, food inside top compartment of asian prep top cooler, croutons, and food along steamtables), in Italian front food service area (deli meat, cheese, etc. in ice bath), in Deli front food service area (bread, soups, cold tables, etc.) and along salad buffet lines in serving area/cafe. C/A: Unless cooling, all food must be stored covered. COS: Food covered in all areas and food removed from buffet at 1:30pm. *Buffet tables and serving line glass coverings do not fully cover foods on serving lines and salad buffet line during holding. | 1. Observed black debris along wall inside ice machine in Asian kitchen prep area. 2. Observed can opener blade heavily soiled with black debris and food accumulations at prep table in main kitchen. C/A: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: Ice discarded; all equipment cleaned and sanitized."

"Observed the ice bins in the main kitchen area with a significant pink/mold like build-up. C/A Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. COS Manager removed the ice and cleaned the largest ice bin before EHS left the premises. The smaller one will be clean tomorrow and the manager will be required to send pictures to EHS Update: On 8/11/2025 the operator emailed pictures of the clean ice bins. Violation corrected | Observed wiping cloth sanitizer and utensil sanitizer concentration levels higher than 700ppm Facility is using lactic acid and the concentration was at 1130ppm CA: If another solution of a chemical specified under paragraphs 1 through 3 of this subsection is used, the permit holder shall demonstrate to the Health Authority that the solution achieves sanitization and the use of the solution shall be approved; P 5. If a chemical sanitizer other than chlorine, iodine, or a quaternary ammonium compound is used, it shall be applied in accordance with the EPA-registered label use instructions ;P and 6. If a chemical sanitizer is generated by a device located on-site at the food service establishment, it shall be used as specified in 1-5 of this subsection and shall be produced by a device that: (i) complies with law as specified in sections 2(q)(1) and 12 of the Federal Insecticide, Fungicide, and Rodenticide Act (FIFRA), P (ii) complies with 40 CFR 152.500 Requirement for Devices and 40 CFR 156.10 Labeling Requirements, P (iii) displays the EPA device manufacturing facility registration number on the device, Pf and (iv) is operated and maintained in accordance with manufacturerโ€™s instructions.
